Step-by-Step Instructions

1

Step 1

Prepare the kadayıf dough: mix warm water, yeast, and 1 tbsp sugar. Let sit 5 minutes.

2

Step 2

In a large bowl, combine flour and salt. Add the yeast mixture and knead into a soft, slightly sticky dough.

3

Step 3

Cover and let the dough rise for 45–60 minutes until doubled in size.

4

Step 4

Pour the risen dough into a greased 28–30 cm pan, spread gently, and let rest 10 minutes.

5

Step 5

Bake in preheated 180°C oven for 25–30 minutes until golden. Let cool completely.

6

Step 6

Prepare cherry syrup: combine cherries, sugar, and water in a saucepan. Bring to a boil, cook 8–10 minutes, then add lemon juice and simmer 1–2 minutes. Let cool until lukewarm.

7

Step 7

Optionally cut a thin top layer from the kadayıf and set aside. Pour 1–1.5 cups warm water over the base and let absorb 10 minutes.

8

Step 8

Gradually pour lukewarm cherry syrup over the kadayıf over 15–20 minutes to ensure even absorption.

9

Step 9

Let the dessert rest at room temperature for 2–5 hours or refrigerate overnight for best results.

10

Step 10

Serve with clotted cream and garnish with fresh cherries if desired.

About This Recipe

Ekmek Kadayıfı is a traditional Turkish dessert beloved for its soft, spongy texture and rich syrup flavor. This version is made entirely from scratch, starting with a homemade bread-like kadayıf base, then soaked with cherry syrup. The dessert is ideal for tea time, gatherings, or festive occasions.

The key to perfect kadayıf is letting the syrup absorb gradually into the bread base, ensuring each bite is moist but not soggy. For best results, allow the dessert to rest several hours or overnight in the refrigerator before serving. Garnishing with fresh sour cherries or clotted cream elevates the presentation.
